Japan is made up of an unbelievable 6,852 islands, all unified under one flag. If that seems immense, just try to imagine the cultural variety which exists, or existed, across that many separate communities. Nowadays, the homogenization of modern culture means that much of that is being lost.
Rito Kitchen Kagurazaka is a restaurant which is dedicated to preserving and celebrating these disparate island communities through food. They will take you on a trip to a different culinary microcosm every month using ingredients sourced from the islands themselves to recreate their dishes in Tokyo.
In total, the restaurant represents over 100 islands (the names of which are written on the roof), some of them very remote. To make sure the ingredients reach Tokyo in the best state possible, they spare no expense, using modern preservation techniques to keep them super fresh.
Ama-cho Island in Shimane Prefecture is the main one, but other locations come and go from the menu throughout the year. They even employ a team of people to visit islands and source out the dishes and ingredients for these monthly menus.
The owner, Koike-san, is from the island of Izu Oshima, so this restaurant represents a very personal mission for him. He believes that every piece of food has a story attached — part of a mosaic of stories about the many cultures and islands which make up Japan. Take a seat at one of his tables, and let him tell you one of these stories through fantastic cooking and unique dishes.
