Shippoku cuisine isn’t as well known as other styles of traditional Japanese food, but it’s actually one of the most important cultural cuisines of Japan. It’s a fusion style developed in the few port cities where foreigners were allowed to trade in pre-Meiji Japan, particularly Nagasaki. This means a heavy Chinese influence, with some European influence in the cooking techniques brought via the Dutch. Did you know that tempura deep frying was introduced to Japan by these European traders? The owner-chef of Saikaido Tokitoki spent time training in that historically significant port city to master the cuisine’s international intricacies. Nowadays he uses that skill to develop his own menu featuring interpretations of historic dishes which represent the process of cultural borrowing that underpins so much of Japanese cuisine. This is all expressed through his own simple but refined approach — dignified enough to have drawn the attention of the Michelin Guide judges.
