地元のケバブの飲食店やパン屋を這いずり回り、アイランでターキッシュピザを洗い、イスタンブール郊外でトルコ紅茶でミッドドルイースタンのセカンドノベルデザートを試食。 地元の人がどこに住んでいて、買い物をして、どうやって食べているのかを観察する。 新鮮なトルコの薄皮ピザが地元のパン屋からどのように作られているかを学び、もちろん本物の炭ケバブで自分のラップパイドパンを巻く。
