イズミルの料理は、ギリシャ人、セファルディク系ユダヤ人、アルメニア人、レヴァンティン人、クルド人、クレタ人のコミュニティから何世紀にもわたる地中海の影響によって形作られた、紛れもなくローカルなものです。
まずはオスマン時代のティーガーデンで、ボイヨズ、じっくり煮込んだ卵、地元のトゥルムチーズを味わい、3代目のヘルバメーカーによるテイスティング。 そこからローマとオスマンの歴史を重ねた通りを散策しながら、伝統的なスープ、できたてのロクマ、スパイスを試食します。
その後、シーフード、ボスニア・トルコの特選料理、ピデ料理、ホームスタイル料理など、街のクラシックなロカンタで立ち寄りながら、ご近所市場を通り抜けます。 また、羊の頭を密猟して作ったイズミル名物の「ソゥース」も試飲し、最後には伝統的なセモリナのデザート「シャンバリ」と、挽きたての豆で淹れたトルココーヒーをいただきます。
