イスタンブールの旧市街は中世と現代が交わる場所であり、このツアーでは、この地域を移動し続ける食べ物、市場、人々を通してその交差点を探索します。
伝統的なティーハウスで地元の商店主と朝食を共にしてから、エジプトのスパイス市場周辺のあまり知られていない通りへ向かい、ファティの奥へと進みます。 道中では、卸売業者やチーズ屋、街の食糧を援助する職人に出会う。
カンタルチュラルでは、トルコの菓子作りの4代目の職人を訪ねたり、古いキャラバンサライでお茶を飲んだり、オスマン時代のボザツなど隠れた史跡を発見します。 ビザンチン水道脇にある家族経営のレストランで、伝統的なピットローストラムの昼食を惜しみなく楽しみながら締めくくります。
