本場の味と古来の職人技を巡る旅に出かけましょう。 地元の酪農場を訪れ、有名なパルミジャーノ・レッジャーノの製造工程を間近で見学しましょう。銅製の大きな釜から、何千ものチーズが完璧な状態になるのを待つ荘厳な熟成室まで、見どころ満載です。 専門ガイドによる解説に耳を傾け、最後は熟成チーズの美味しい試食で締めくくりましょう。
その後、伝統的なハム工場へ向かいます。 生ハムの製造工程のあらゆる段階をご覧ください。肉の選定から塩漬け、そして独特の香りを生み出す長時間の熟成工程まで、すべてを網羅しています。 品質を保証するために用いられる「タッピング」と呼ばれる工程を見学し、最後の試飲では地元のワインで乾杯しましょう。
ボローニャから出発する方には、歴史ある酢工場への見学も含まれています。
