這是一堂由byFood原創的2小時課程,來自東京國際知名拉麪店Tsuta的團隊。
課程將帶您深入瞭解這家餐廳的招牌融合拉麪,每一道菜品都曾爲餐廳贏得2015年的米其林必比登美食獎,以及2016至2019年的米其林一星。
首先,您將聽到來自您的主持人Yuka的介紹,她是日本蕎麥麪Tsuta的CEO,擁有時尚、酒店和科技的多元背景。您將瞭解到Tsuta對品質的執着,以及創始人Yuki Onishi的哲學,這種精神至今仍體現在細節上,包括水的過濾、碗的加熱和餐具的選擇。
接下來,您將在營業前參觀廚房的幕後運作。然後,您將品嚐Tsuta廣受歡迎的醬油拉麪的每個組成部分。以清淡甜鹹的醬油湯底爲基礎,並從多元文化中汲取靈感,這款拉麪融合了日本、中國、意大利和法國的烹飪原則。您還可以選擇鹽味拉麪。
