Follow three Chinese teas and discover how the same leaves reveal different qualities across successive infusions. Begin with simmered white tea and a simple introduction to tasting. Explore Tie Guan Yin through at least four infusions, looking for floral and fruity notes as your host explains partial oxidation and the tea maker's craft. Continue with at least four infusions of pine-smoked Lapsang Souchong. Explore its smoky aroma and possible longan-like or red-date notes, and hear its connection to tea's export history. Taste the first cups alone before adding light tea snacks. Compare aroma, mouthfeel and finish in your own words. Return to the white tea, ask questions and take away ideas for everyday tea drinking.
