Salt made from seawater pumped up from the bottom of the Tsugaru Straits and cooked over Aomori firewood. The seaweed “uganomoku and ""gagome kelp"" that can only be found in the waters around Hakodate, add depth to the flavor of the salt.
The secret of the salt’s deep umami flavor is the use of kelp as an ingredient. The addition of mild bonito dashi and Hokkaido soy sauce also help to enhance the umami flavor of the mix. It can be used for salads, tofu, nabe (hot pot), fried foods, and meat dishes.
