In this interactive class, Chef Rita breaks down the art of hand-pulled noodles into approachable steps. Start by preparing noodle dough from flour, oil and salt, learning how proper kneading creates strength and flexibility.


Next, stretch and pull the dough into Biang Biang noodles, practicing the technique that gives them their signature shape and chew. Chef Rita will share tips to help you control thickness and achieve consistent results.


Alongside your noodles, create two flavorful sauces: a fragrant garlic sauce with peppercorn and ginger, and a creamy peanut sauce with soy and vinegar. Enjoy your dish at the end of class and leave with skills rooted in both technique and tradition.

You’ll begin by mixing flour, oil and salt into a smooth dough, learning how to knead and rest it properly for elasticity. Then comes the highlight: mastering the technique of stretching and pulling your dough into wide, ribbon-like noodles. Chef Rita will guide you step by step so your noodles achieve the perfect texture and thickness. To finish, prepare two bold sauces — a savory garlic sauce with peppercorn, ginger and green onions, and a rich peanut sauce with soy sauce and vinegar.
