At 13:00, you will meet at Kanazawa’s Kitchen, Omicho Market, and spend 45 minutes touring Omicho with Shimizu-san, the sushi master of Akame Sushi. Proprietor of his own restaurant for 46 years (in the sushi business for 55 years), you’ll tour Omicho with Shimizu san and learn what to look for when purchasing fish. Together, you’ll select some of the fish for your sushi dinner. After a 10-minute walk to Akame Sushi from Omicho, you’ll watch from the counter as Shimizu san prepares the fish you selected and creates a special 10-piece nigiri set, along with his famous dashimaki tamago (rolled Japanese omelet) and miso shiru (miso soup).
