Chateau Ksara is Lebanon's oldest winery, founded by Jesuit monks in 1857, and its most special feature is utterly unlike anything at the previous two estates — 2 kilometres of ancient Roman cave cellars discovered beneath the winery by the Jesuits in the 19th century, where wine ages naturally at a constant temperature year-round.
