Tatara no Kaze is Hida's first locally brewed sake. It is a Junmai Ginjo sake with a clear ginjo aroma, a fruity, slightly sweet taste, and a refreshing acidic aftertaste. Tatara no Mai was created in response to the popularity of Tatara no Kaze. It is a dry Junmai Ginjo sake that has a fruity aroma and full-bodied flavor. Its dryness is pleasant and refreshing.
