One of Japan’s top three varieties of udon, Inaniwa udon from Yuzawa City in Akita Prefecture is renowned for its firm and smooth texture. Its history stretches back four hundred years ago, when wheat-farming villagers in the area gave these highly-valued udon noodles to their feudal lord as an offering. Over the past few decades, Tomiya Shoten has been producing and perfecting their Inaniwa udon, which has been well-received by customers for its high-quality texture and flavor.
