The chef will guide you through the creation of various types, including classic, Milanese, Neapolitan, and sablé shortcrusts, explaining how each version suits different desserts. Alternatively, you can try your hand at preparing sponge cake, the famous airy batter ideal for layered cakes. n this practical session, you’ll create at least two types of shortcrust pastry, learning the tricks to achieve the perfect texture and an irresistible flavor. Create Irresistible Creams No Italian dessert is complete without a delicious cream. During the course, you’ll learn to prepare three traditional creams: Pastry Cream: The classic velvety, rich cream infused with vanilla. Crème Anglaise: A light and silky sauce, perfect for garnishing desserts. Butter and Lemon Cream: A fresh, citrusy variation that adds a unique touch to your creations. With the chef’s guidance, you’ll master the techniques for crafting smooth, flavorful creams that perfectly complement bignè, sponge cake, or shortcrust pastry.
