You’ll learn the small details most classes skip: how pasta dough should feel at each stage, how thin to roll it, how to seal ravioli cleanly, and how to build a tiramisu that stays silky and stable.


Our chefs guide you with personal checkpoints throughout the class, keeping it hands-on, clear, and enjoyable—whether it’s your first time or you love to cook. Ingredients are fresh and local, the atmosphere is warm and refined, and dietary needs (including gluten-free options) can be accommodated. You’ll finish by sitting down to enjoy your meal together, paired with good wine—leaving Florence with real skills, not just photos.

You’ll start with pasta dough from scratch, learning chef techniques for texture, elasticity and thickness, with guided checkpoints so you know exactly what “perfect” feels like. Roll and shape your dough, then craft ravioli with a classic ricotta-and-spinach filling, focusing on clean sealing, proper cooking times and finishing for restaurant-quality results. End with a traditional tiramisu: whip a light mascarpone cream, layer espresso-soaked ladyfingers and cocoa, and learn the small details that keep it silky (never runny). Then sit down and enjoy what you’ve created, paired with good wine and warm hospitality.
