The Justistal valley does not appear in most travel itineraries. No cable cars, no souvenir shops, no crowds. Just a working alpine dairy at 1,400 metres, a farmer who produces 700 wheels of cheese each summer, and a breakfast most visitors to Interlaken will never eat. You meet your guide at 8:00 a.m. in Interlaken. The drive up into the Justistal takes about 30 minutes. On clear mornings, the last stretch is a short walk through the alpine meadows. At Alp Signswiler, Daniela Thierstein walks you through the cheese-making process herself: from the morning milking to the aging cellar, with time to taste, meet the animals, and ask real questions. Breakfast is served at the farm table: bread baked the same morning, local butter, Daniela's own cheese, homemade jam, soft-boiled eggs and coffee. The Bernese Alps are right in front of you. Nothing on that table comes from a supermarket. Maximum 8 guests per departure. The tour ends back in Interlaken around midday.
