It can take over 10 years of training to become a sushi chef or ‘itamae.’


Apprentices usually start by cleaning and observing, slowly making their way through learning how to slice the fish, prepare the rice and assemble the morsels of sushi before serving it to guests directly.


But this workshop does things a little differently, challenging you to take your first steps in the world of sushi-making, hands-on, from the start.


It might seem daunting, but it is possible (and fun) with the knowledgeable guidance of a master with over five decades of experience in this workshop at his very own sushi restaurant, a beloved local establishment just minutes from Kanazawa Station.


Learn the time-tested processes and techniques that ensure delicious sushi every time, and try your hand at making both nigiri and maki sushi rolls.


After the cooking session, enjoy a delectable meal with the pieces you make, plus an omakase assortment of nigiri and tempura prepared by the chef, complete with a glass of beer, sake, or a soft drink.

What You Get

4 pieces of nigiri (sweet shrimp, tuna, yellowtail and fatty tuna) and 1 maki sushi roll made by guests
A 4-piece nigiri set prepared by the chef (salmon roe and sea urchin, herring roe, seared salmon and eel)
One portion of tempura (shrimp, fish, tomato, bell pepper, baby corn and eggplant) or sukiyaki prepared by the chef
Transportation to and from the restaurant

  • The host is not fluent in English but has extensive experience serving international guests. If interpreting is required, a translation divide may be used
