It can take over 10 years of training to become a sushi chef or ‘itamae.’ Apprentices usually start by cleaning and observing, slowly making their way through learning how to slice the fish, prepare the rice and assemble the morsels of sushi before serving it to guests directly. Learn the time-tested processes and techniques that ensure delicious sushi every time, and try your hand at making both nigiri and maki sushi rolls.
