Modeled after a boathouse perched on a lake, the namesake Lakehouse at The Ritz-Carlton, Nikko, delivers a farm-to-dining concept that pays homage to the spectacular bounty of Tochigi Prefecture through its “garden gastronomy.”
The sprawling space, which takes cues from cabin silhouettes, channels cozy and luxurious with accent pieces inspired by Nikko. The wood-swathed walls are hung with artwork of animals roaming around Lake Chuzenji, as well as indigenous floras. Lighting installations reminiscent of fishing rods nod to the lakeside setting. Floor-to-ceiling windows frame sweeping views of verdant landscapes and the tranquil lake, while the terrace offers an inviting spot for open-air seating on especially warmer days.
A picturesque waterfront restaurant offering a refined dining experience is Nikko's culinary dream. This dream is brought to life in Lakehouse under the direction of two-Michelin-starred Chef Kanji Kobayashi, who cultivates over 300 varieties of vegetables and herbs on his own farm in Wakayama Prefecture.
Inspired by the local terroir, Chef Kobayashi invents a menu that goes where the season moves. Special attention is paid to local daisy-fresh vegetables nurtured in Tochigi Prefecture. Previous lunch courses began with clever takes like smoked Itadaki trout paired with radish and yuzu, followed by tagliolini with radicchio and lemon — an interplay of Japanese foodstuffs with Italian nuances. Chef Kobayashi’s respect for the land is further reflected in sustainable fish offerings and the inclusion of Nikko’s renowned HIMITSU pork, paired with Nissato leeks and potatoes.
