The most sought-out bowl of niboshi ramen in Japan can be found at Niboshi Chuuka Ichikawa. Despite the rather remote location which necessitates a drive, bus ride, or fair walk from the station to get to it, there's always a crowd inside and outside of the shop.
The jun niboshi soba is made of homemade ramen noodles soaked in a soup that's 100% pure niboshi (dried sardine) broth. For those who would prefer a milder fish taste in the soup, the regular niboshi soba is made of a mixture of niboshi broth, chicken broth, and mackerel broth.
