Food grilled on an iron teppan is made even more mouthwatering with front-and-center preparation, which demands precision at every point. Teppanyaki chefs often toe the line between culinary professionals and engaging performers. In his restaurant, Chef Wagatsuma Masaru blends traditional Japanese aesthetics with its culinary traditions.


Even before taking the reins in 2013, Chef Wagatsuma has spent almost 20 years standing at Steak Kojiro’s grills, coaxing the magic of Miyagi beef into the public consciousness. But Steak Kojiro goes above and beyond to emphasize the visual appeal of teppan dining as well as its flavor. By sourcing ceramicware and serving pieces from around the country like Arita porcelain ware, Echizen lacquerware and Edo Kiriko glass, Steak Kojiro is able to introduce guests to exemplary works of Japanese culture that extend far past the dining room.


Even the floor-to-ceiling windows behind the main dining counter look out onto a manicured Japanese garden, modeled after Ryoanji Temple in Kyoto. The counter itself, a curved bar with inset teppan grills, is a magnificent sight to behold — but the private rooms, of which there are many, are perfect for quiet, intimate celebrations.


This is to say nothing of the quality of the ingredients, which is second to none. Sendai beef speaks for itself — Miyagi’s capital city is renowned for the quality of its wagyu, of which the finest A5-grade is served up on Steak Kojiro’s teppan grills. Rock salt comes all the way from the Bolivian Andes mountains, wasabi from Shizuoka Prefecture, live lobster from Canada, and abalone from Miyagi’s own Ishinomaki port.
