On this tour, you will visit a historic brewery in the mountains of western Tokyo, an area many visitors never see. Surrounded by quiet streets and fresh air, the brewery offers a slower pace focused on craftsmanship.
After meeting your guide in western Tokyo, you will step inside the brewery and see the process up close. The scent of steamed rice fills the air as brewers explain each stage, from polishing the rice to fermentation and aging. You will learn how slight differences in technique affect aroma, texture, and flavor.
Your guide, Yusuke, was born and raised in western Tokyo and is a seasoned sake expert. A former overseas operations manager for the Japan Sake and Shochu Makers Association and a judge at the 2022 Japan Sake Awards, he shares his knowledge in a clear, approachable way and welcomes your questions.
The tour ends with a guided tasting of several sake varieties, from fresh styles to premium selections. As you sip, you will notice differences in fragrance, sweetness, acidity, and finish.
Before leaving, you can visit the brewery shop to choose a bottle to take home.
