Its signature ramen is the niboshi soba, made from niboshi-based broth for the soup and served with quail eggs and sliced pork chashu. The standard niboshi soba can be a bit bitter, with a fishy aroma, but the one at Hechikan is smooth yet rich in flavor.
Hechikan's niboshi soba's broth is made of a different blend of dried fish each day. A combination that reigns supreme is the mackerel and anchovy blend. The ramen shop also offers seasonal mazesoba, which are noodle dishes without the soup, as well as limited bowls including ones made with surf clams, scallops, tuna, or lobster.
