His hotel restaurant is now run by Tejima-san, who serves up three set course menus, all based on a philosophy celebrating the earth of the Wakayama region and the produce it provides: local fish, fruit, vegetables, and meat.
The large 12th floor windows offer a beautiful view over the city and hills beyond, so diners can cast their eyes towards the fields and forests that provided their food while they eat.
