Restaurant Details

Nihonryori Kanda, usually referred to as Kanda, is a legend in its own right. With the very first edition of the Michelin Guide Tokyo, it was the first restaurant to receive three Michelin stars, and impossibly, has held on to those three stars to today.


The Michelin Guide is known to be particularly opaque about its rating criteria, but it is almost unheard of for a restaurant to maintain its Michelin rating after shifting premises. But after its move to Toranomon Hills after spending 18 years at its original location, Tokyo gourmets' jaws dropped as Kanda triumphantly reemerged in the next year's Michelin Guide Tokyo with its three stars still intact.


So it stands to reason that the rumours swirling Kanda are well deserved. The absence of a menu isn't without reason. Chef Kanda Hiroyuki left it out on purpose as he aims to serve guests' course menus tailored to their tastes and preferences, without losing the original essence of the ingredients.


This level of customization is truly impressive, seeing as the chef has only a brief period of time to adapt to the eight guests seated in front of the counter each time. Composed of the general order of vegetables, sashimi, soup, sushi, grilled and steamed dishes, and dessert, the omakase course meal uses ingredients which vary depending on what's in season as well as what's fresh that day.


The accommodation to guests, sincere hospitality, and warm service are just the icing on the cake of the whole dining experience at Kanda. This restaurant truly lives up to its stratospheric reputation.
