Three main varieties are on offer: shamo soba (made with a blend of chicken broths), niboshi ramen, and maze-soba (with no soup, flavored instead with soy, pork lard, and smoked egg yolk)
The noodles and toppings in each dish are considerately arranged rather than thrown in aimlessly, a nice touch which adds to the aesthetics of each bowl.
