The owner-chef at Shunso trained at a traditional Japanese ryokan inn, where he learned the ins and outs of fantastic service. You’ll be greeted warmly upon entering his 18-seat shop, and won’t stop smiling until you leave. That’s due in part to the charming personality of the chef, and the fantastic kaiseki cuisine on offer here. Seafood takes a key role in the meal, with squid kept live on the premises to ensure the highest level of freshness. Even more impressive is his octopus dish slow cooked for such a long time that it reduces in size by 50 percent, and has none of the chewiness usually associated with this muscle-y seafood. Western ingredients like blue cheese are also used at times to give dishes a unique twist. Perhaps most impressive is the price, which is very reasonable for a 2022 Michelin-starred restaurant in Tokyo. They will even arrange bespoke meals to match your budget and tastes if you contact them in advance.
