This small soba restaurant isn’t your typical noodle eatery. The chef at Yuan Yamori has a great knowledge of the history and culture of soba cuisine, and represents it faithfully in his menu. A course menu is on offer here, in which every dish features soba shown in a different light. Many of the offerings are historic dishes which you won’t usually find in modern soba shops.
The owner-chef uses a mix of differently milled flour types for his noodles. This results in a unique texture which characteristics of different kinds of soba. It’s this artisan touch which puts Yuan Yamori in another league — up among the other Michelin star restaurants of the city.
