Miso is a cornerstone of Japanese cuisine, but its depth and regional variety are often overlooked.


This 90-minute workshop in Kyoto offers a hands-on, sensory introduction to miso through tasting, explanation, and practical cooking.


The experience will begin with a short interactive quiz to introduce essential miso knowledge. Visual cards are used to explain fermentation, ingredients, and regional styles, providing a clear foundation for your tasting experience.


Guests enjoy a guided tasting of 10 miso types and miso soups, learning how ingredients, fermentation time, and regional traditions shape aroma, richness, and umami.


You’ll also make miso balls that are perfect for easy miso soup that you can prepare at home, and learn how to incorporate miso into simple dishes. The focus is on understanding miso’s versatility in Japanese home cooking rather than following strict recipes.


This workshop is beginner-friendly but still offers meaningful insights for food lovers and fermentation enthusiasts. It encourages observation, comparison, and discussion, providing travelers with a more profound and more thoughtful food experience.
