Experience Details

Nagoya is known for having a distinct cuisine that makes ample use of the rich, savory taste and incredible versatility of miso, a thick paste consisting of fermented soybeans, salt and koji mold. This home cooking class, led by an experienced home chef and miso specialist, centers on one of such specialties — miso nikomi udon.


Miso nikomi udon is a hearty dish that you’ll prepare from scratch by making your own udon noodles by hand. These noodles are then boiled in a soup with a miso base, and the dish is topped with chicken, leek and deep-fried tofu. While technically a soup with a miso base, this dish is distinctly different from the classic take on miso soup in most places in Japan, thanks to a secret ingredient you’ll uncover in this class.


During this class, you’ll sample the differences in both color and taste across several types of miso from all over Japan. You’ll also learn to make soup stock from scratch and make another quintessentially Japanese dessert in addition to miso nikomi udon.


You'll then enjoy your home-cooked feast together with your host.
