Good to Know
This class is led by Oswaldo, a Oaxacan chef who trained deeply in his region's traditional cooking and even wrote a book about Oaxacan bread. You won't just watch from the sidelines you'll make the mole yourself, make tortillas on the comal, put together memelas and tamales, and along the way we'll talk about why each ingredient and technique matters. At the end, we share the food, drinks, and you take the recipes home with you.

You’ll be able to taste and enjoy all the dishes you prepare during the cooking class, drinks included.
You'll be welcomed into the workshop and get an introduction to the ingredients you'll be working with masa, chiles, spices, and the staples of Oaxacan cooking. From there, you'll start with the chocolate tamales, learning how to prepare and wrap them the traditional way. Next comes the mole estofado, made from scratch, followed by a hands-on salsa made in the molcajete. You'll then move on to making tortillas and cooking them on the comal, along with fresh memelas. Once everything is ready, you'll sit down together to enjoy the meal you just prepared, alongside chef Oswaldo. Since you'll be tasting throughout the class and sharing a full meal at the end, we recommend coming with an appetite and not eating a heavy meal beforehand.

An authentic cooking experience in Oaxaca
This cooking class was fun, and the food was delicious. Oswaldo was a great chef, teacher, and host. He shared his grandmother's mole recipe, which was my favorite. The other photo shows the chocolate tamales we made. I definitely recommend his cooking class for small groups.

Great !
Made a 3 course Oaxacan meal with Oswaldo. They all came out amazing and Oswaldo was an amazing teacher. We were in a small group of 6 in total which means we all got enough help and attention from the chef. We ended the afternoon by all having dinner together and enjoying the amazing dishes.

Traditional Mexican Cooking Class
Chef was completely prepared and had everything prepped and ready for us to start cooking. All of the food was delicious! We learned about traditional cooking methods and how to make all the dishes from scratch. We got to enjoy our meal afterward. We had a wonderful experience and left feeling full and satisfied!

Chef Oswaldo Ramirez cooking experience
My daughter and I took the cooking class with Oswaldo. We had such a great experience learning about how to make salsa, mole, tortillas, chicken, rice, melas and chocolate tamales. Oswaldo was patient and very knowledgeable. He made it an incredible experience that has been a highlight of our trip! Highly recommend!
