It's an exceptional opportunity for every foodie to watch, how mochi is pounding. Even more so to participate in it! We really enjoyed the interesting insights, and discovering the whole process – not to mention the unique deliciousness of the fresh mochi. We could even try four different types of it! The organisation of the whole event was very smooth: easy communication, clear itinerary, friendly and nice hosts, professional chef by the soup making (actually, it was a complete lunch), lot of further tips and informations on the traditional Japanese cuisine. Marie, our host is actually an advocate of the fermentation and traditional way of cooking ("washoku"), so she has a broader point of view on this topic. Through her experience, we could also get a deeper understanding on the usage of the ingredients and their health effects. It was a pleasure to meet her and participating on this experience. I would warmly recommend to all food lovers and enthusiasts! (The location is within reachable distance of many famous sake breweries and also not far from the Fushimi-inari shrine. So you can schedule nicely into your plans.)

Jorge speaks 4 major languages and knows the backstreets of Kanazawa. Amiable, entertaining, and flexible. Will adapt to customers’ needs. He has very interesting and thorough information. Suggestions: carry a flashlight and be able to walk a lot. Food was a different preparation and good example of Japanese cuisine.

The host Tetsuro was very knowledgeable with the history of Japan especially Kanazawa we came away having learnt so much about this beautiful culture. No geisha seen but learnt a lot about them too. Ended the tour with a traditional Japanese dinner which was so beautifully presented.

Discover Delicious Vegetarian Miso Soup on a 1-Day Tour in Japan

Embark on a delightful journey through Japan with an exclusive 1-day tour that caters to vegetarian palates. As you explore local culinary traditions, you'll have the chance to savor authentic Miso Soup — a staple of Japanese cuisine known for its rich flavor and versatility. Designed with vegetarian options in mind, these tours allow you to experience the authentic taste of Japan without compromising your dietary preferences. Whether you're a seasoned traveler or a food enthusiast, this tour promises a memorable gastronomic adventure.

The Joy of Vegetarian Miso Soup

Miso soup is a beloved component of Japanese meals, enjoyed from breakfast through to dinner. Traditionally made with a combination of dashi (a type of broth), miso paste, and ingredients such as seaweed and tofu, miso soup offers a comforting, umami-packed experience. For those adhering to a vegetarian diet, these tours provide versions of miso soup that sidestep fish-based dashi in favor of plant-based alternatives. You'll enjoy miso soup prepared with vegetables, mushrooms, and sometimes even tofu, offering nutrition and taste in every spoonful.

The subtle depth of miso's flavor arises from the fermentation process of soybeans, barley, or rice. This fermentation not only contributes to its savory profile but also makes miso soup a healthy option rich in probiotics and nutrients. On your tour, you will visit local eateries and perhaps a traditional Japanese cooking class, offering hands-on opportunities to learn about different kinds of miso and the techniques involved in preparing soup.

Experience More Than Just Soup

While miso soup is a highlight, your one-day excursion is packed with a range of vegetarian dishes that extend beyond the bowl. Expect to encounter a variety of bento boxes with seasonal vegetables, fragrant rice dishes, and tempura made from fresh local produce. Each dish is prepared with care, emphasizing the natural flavors of the ingredients used. Moreover, your taste journey might take you through bustling markets, where you can sample and purchase regional specialties to take home as culinary souvenirs.

Beyond just food, these vegetarian tours provide a cultural deep dive into the traditions that shape Japanese culinary landscapes. Learn from experienced chefs and local guides who will share insights into the historical and cultural significance of the recipes you'll sample. Whether it's a brief visit to a tea house for a traditional matcha tasting or exploring street food stalls, each aspect of the tour will ensure an enriching experience.

Join this specially curated 1-day tour and discover the vegetarian wonders of Japan with a focus on the quintessential miso soup experience. Whether you're a local or a tourist, these tours offer a unique way to appreciate the country through its evolving vegetarian offerings while indulging in its timeless culinary delights.
