Rather than experimenting with Japanese fusion or taking an innovative approach with inspiration, Chugokusai Kakyu-Bou leans on its legacy to present dishes that are firm in their culinary foundations. The name itself also comes from strong Chinese tradition, rooted in mysticism, taking the term Kakyu from a holy mountain, Mt. Haqiu, in Chinese legend and appending it with “Bou” the word for kitchen. Altogether, the name means “Kitchen of Mt. Huaqiu.”
While putting his individuality into each dish, Chugokusai Kakyu-Bou commits to the ingredients and expression of Chinese classics.
