With a commitment to detail, from furnishings and decor to condiments and toppings, Taro Daimon established the restaurant on the basis of his fascination with the craft of sushi, which began in his childhood.
Paying close attention to the seasonal tastes of Japan, each dish served at Daimon is carefully prepared to fully maximize the flavor and tenderness of the ingredients. The unbalanced proportions achieved by adding a generous amount of sashimi on a relatively small amount of rice is intended to bring forth the freshness of the seafood, and the same can be said when a mixture of glaze is added to certain sushi.
