This Italian restaurant in Daisen uses the local produce of Akita to create dishes with a unique local spin that couldn’t exist elsewhere. A sense of place, and of local pride, is on full display here. The chef trained for 3 years in Italy, and then, driven by a sense of hometown pride, decided to use Italian cuisine as a medium to display the richness of Akita’s rivers, forests, and fields.
The bounty of the region includes locally-bred rabbit, wild boar, duck caught in the forests, and locally-farmed vegetables. These are transformed into Italian masterpieces such as Piedmont-style stewed veal with mushrooms, chicken liver, and red wine vinegar. Diners here have the luxury of choosing from several set course menus, which change throughout the year with the seasons.
