Below are equally premium chefs with much higher acceptance, same caliber, easier to secure.
Guchokuni pays homage to the traditional kappo-style (to cut and to cook) dining experience by serving a unique take on familiar Japanese cuisine.
Restaurant Details
Guchokuni, which translates to "simple honesty,” sums up chef Masato Otsuka's culinary commitment. In this one-star Michelin restaurant, chef Otsuka and his team showcase this by taking a creative approach to traditional Japanese cuisine.
The dishes, which evolve seasonally, are sourced directly and thoughtfully from local farms and small-batch producers. Each dish is carefully prepared and plated to highlight the restaurant's commitment to simplicity, authenticity, and quality.
Guchokuni offers an extensive selection of dishes that range from surinagashi (soup) of turnip or burdock root to Sarashina soba. Served in kappo-style, where the chef cuts and plates each dish for guests, the restaurant creates an intimate and engaging dining
experience.
With only a maximum of 12 seats, the restaurant fills up quickly. Be sure to make a reservation in advance for the full Guchokuni experience.
