Here, the philosophy is simple yet profound — “to satisfy the heart more than the stomach.”
Only carefully selected unbred female cattle (heifers) are used, prized for their lower fat melting point, delicate aroma, and exceptional tenderness. Each cut — from the rarest portions to classic favourites — is prepared with the optimal seasoning and grilling technique to bring out its natural depth of flavour.
Chef Matsumoto, raised around premium wagyu since childhood, is known as a “meat therapist.” His unique approach involves selecting cuts and preparations that best suit each guest’s preferences and condition, offering a semi-customised omakase experience that feels both personal and deeply considered.
The interior, featuring gentle green walls and the warmth of natural wood, exudes tranquillity. From the counter, guests can gaze upon a Japanese-style garden while inhaling the elegant aroma of charcoal-grilled wagyu.
