The chef, with over 35 years of experience in top ryotei and luxury hotels, crafts each dish to draw out the true flavour of seasonal ingredients without pretence or excess.

The restaurant’s serene eight-seat interior, designed by architect Toru Kijima, embodies the aesthetics of sukiya architecture — combining soft lighting and natural materials to create a peaceful, meditative space. Every detail reflects the philosophy of “harmony and balance,” where guests can relax and savour the delicate aromas of charcoal and tea.

The Omakase Course offers a seasonal journey featuring wild game such as bear or duck (available from winter to early spring), premium Wagyu beef grilled over Binchōtan, and a curated selection of rare Japanese sake, including exclusive labels from Kokuryu Brewery such as Ishidaya. Each course concludes with a soothing bowl of matcha, offering a tranquil finale to an unforgettable experience.
