Located between Ginza Station and Shimbashi Station, on Ginza Corridor Street, professionals at this swanky meat house pick and purchase an entire Saga cow with at least a marbling score of 5. Recognized globally as one of the finest beef varieties, this tender, marbled protein is exclusively produced in Saga Prefecture, an islet-riddled coastal area lodged near the Korean Peninsula. Only cows that meet the strict criteria for Saga beef certification — Japanese black cattle raised in an ideal environment to produce the signature tsuya-sashi (glossy marbling) — can claim the coveted status.
Even more impressive is that Kabuto secures several champion-winning Saga cows, which its butchers expertly break down into an array of prime, top-tier cuts. Diners can choose their preferred preparation: simmering the beef in a delicate shabu-shabu broth, allowing the marbled fat to melt into the rich, umami-packed sukiyaki warishita broth, or keeping it simple with a salt-and-pepper steak that lets the natural flavors shine.
This luxury comes with over 100 types of wines (including vintage ones) to sip on and enjoy.
