Everything here revolves around the wood-burning furnace. This is both the source of the delicious food and the talking point over which diners bond with each other, seated at huge tables that are over five meters long.
Upon entering, you’ll walk past the wood pile from which the chefs here draw their fuel to create fire-grilled dishes such as a whole duck, most of which are presented very simply so guests can enjoy the smoky flavors and natural umami of the vegetables and meat.
The owner-chef had the flash of inspiration for this place after working at a restaurant in Australia which had its own expansive vegetable farm attached. He decided that he wanted his restaurant to create a clear link between the natural world and the restaurant. This is why when you dine at Maruta, with the earthy flavors and primal sounds and smells of burning fire, you’ll feel your feet firmly planted in the earth.
For an even more interactive experience, Maruta also holds events at which you can pick vegetables from their terrace, and pickle them yourself under the guidance of the chef.
