On the surface, teppanyaki and tempura may appear to have little in common, other than them both being Japanese culinary styles. Teppanyaki involves grilling on a hot teppan grill, while tempura is battered and deep-fried.


But ultimately both are highly performative and interactive culinary arts, providing guests with a front-row view of the chef at work, and personalized counter-side service, with a side of casual conversation.


Thus branching out into teppanyaki is the natural progression for the vaunted tempura restaurant Yokota, whose original Azabu-juban branch has won a Michelin star not just once or twice, but a staggering eight times in a row. Though the style of cooking may be different, the same principles of excellence apply: fresh ingredients and a dedication to customer satisfaction.


And what ingredients they are. Beef is always the centerpiece of teppanyaki grilling, and Yokota has only the finest to offer. Yokota’s chefs choose only the finest A5-grade kuroge wagyu beef for use, preparing it in a variety of ways that pleasantly surprise with their out-of-the-box approach to traditional preparation methods.


For instance, Yokota puts a clever spin on traditional kakuni — braised fatty pork — by substituting it for beef instead, then cooking it sukiyaki-style with soy sauce, mirin and egg yolk for an entire hotpot in a single bite. Soft-shelled turtle soup, a luxurious Japanese delicacy, is made all the more decadent by the addition of A5-grade kuroge wagyu beef and seasonal vegetables.


And that’s not to mention the star of the show, the teppanyaki, which offers guests both A5-grade kuroge wagyu sirloin and filet, as well as premium seafood like live abalone, sea urchin and Japanese spiny lobster (ise-ebi).
