Diligently going to the fish market daily to pick the freshest fish from high-quality producers, Mr. Sugita does not take any shortcuts in providing the very best. Even the tiniest details are considered in building the flavors, as in the tuna from Oma served with light pickles and gizzard shad from Amakusa marinated with vinegar. Building upon established traditions, Sugita-san seasons his sushi rice with red vinegar made from fermented sake and boiled soy sauce.
