Inheriting the essence of olden-times sushi craft, Sushi Sugita shows the beauty of legitimate Edo-style sushi with uncompromisingly high standards of artisanship and meticulous attention to detail. This famous restaurant is also widely known to be extremely difficult to land a reservation at.
It received its first star from Michelin Tokyo in 2017 and its second in 2022, not only for the outstanding sushi but also for the character and the attentive service of Mr. Takaaki Sugita, who keeps on attracting new customers and forming intimate bonds with his regulars.
Diligently going to the fish market daily to pick the freshest fish from high-quality producers, Mr. Sugita does not take any shortcuts in providing the very best. Even the tiniest details are considered in building the flavors, as in the tuna from Oma served with light pickles and gizzard shad from Amakusa marinated with vinegar.
Building upon established traditions, Sugita-san seasons his sushi rice with red vinegar made from fermented sake and boiled soy sauce. When you taste it for yourself, you’ll understand why his nigiri is counted among the best in the world.
