Tucked into a quiet residential street north of the Kyoto Imperial Palace, Sushi Hayashi offers an intimate encounter with Japanese cuisine shaped by two distinct sushi traditions. In this city where culinary heritage runs as deep as its history, the chef draws on both Edomae and Kyo-zushi techniques — weaving together methods born in Edo-period Tokyo and refined over centuries in Kyoto itself — to craft omakase courses that shift with the seasons.
The counter seats nine. That number is intentional. At this distance from the chef's hands, you watch each piece take shape: the press of fingers against rice, the placement of seafood sourced directly from producers in Mie, Wakayama, and Awaji Island. Fish arrives in peak condition and is prepared with the kind of unhurried attention that becomes visible in the finished piece.
Two types of shari are prepared each day — one cut with rice vinegar and salt for Edomae-style pieces, another finished with dashi for those leaning toward the Kyoto tradition. The distinction is subtle but unmistakable on the palate: a quiet brightness from the first, a rounded depth from the second.
Seasonal tsumami courses precede the nigiri, offering small tastes that set the mood before the main procession begins. A thoughtfully curated selection of sake, champagne, and rare Swiss wines accompanies the meal — chosen by the chef to sit alongside, not above, the food.
The room is warm with the grain of natural wood. The atmosphere is unhurried. You leave not simply fed, but settled.
