Combine the use of locally-sourced ingredients with Edomae-style sushi and the outcome is chef-owner Yuto Ohta's original Nagoyamae sushi that is served only at his restaurant, Sushi Michi Sakurada, located in the heart of Nagoya City. Chef Ohta's love and dedication to locally sourced picks are extremely obvious. His seafood ingredients are from all over the country — from the local area of Nagoya to the markets of Toyosu, Fukuoka, and Kanazawa. The red vinegar used for the sushi rice, which is from Toyohashi, is sourced from Aichi, Gifu, and Mie prefectures. Other ingredients like spring water, nori seaweed, and eggs are also carefully selected from trusted sources. Combining the best of what Japan has to offer with chef Ohta's culinary techniques (including shari-giri, the act of rice mixing) the Nagoyamae-style sushi dishes at Sushi Michi Sakurada are unlike any others in the country.
