The small appetizers at this Kyoto sushiya are a real seafood showcase, setting the stage for a series of mouthwatering nigiri to steal the show. The restaurant specializes in Tokyo’s Edomae style sushi, and this is one of the best Michelin-starred restaurants in Kyoto to try it. On the second floor, you can enjoy a view of cherry blossom trees from the long counter facing the window. Here, you’ll be served delicious dishes like grilled saltwater eel, and delicious maguro tuna. No premium sushi meal is complete without this prized fish, so you’ll be glad to know that a full three different cuts are served here. You can enjoy the melt-in-your-mouth fatty style, as well as lean and medium cuts, all on top of red vinegar rice. In everything he makes, the chef knows how to use the natural grain and pattern in the flesh of fish for stunning visuals — the delicately arranged slices flowing over the top of the rice.
