This is the Tokyo branch of the most famous pufferfish ryotei in Kyushu, located in Oita Prefecture. The original is over 100 years old, and is in the hands of a third generation of owners. While their home branch holds three Michelin stars, the Tokyo outlet boasts a still extremely impressive two.
Yamadaya Tokyo lends its menu, decorations, and service style from its parent restaurant, and even serves the same fish caught from the strip of sea between Kyushu and Shikoku. The most striking form it’s presented in is perhaps the thin slices of blowfish sashimi, fanned out on the plate to resemble a chrysanthemum.
The zosui rice soup is also one to look forward to, made with a jelly of boiled fish bones, head, and tail — a historic recipe not commonly seen nowadays. From May to June they also serve a special Shiroshita flounder set course menu with a unique range of dishes.
