Native to Kyoto, the old capital of Japan, kyo-ryori is considered the essence of Japanese cuisine. It is this cuisine that is made in the kitchens of Yugyoan Tankuma Kitamise. Through the intricacy of his kappo craft, the chef conveys the rich and vibrant history and culture of Kyoto — all of its 1,200 years of tradition — to guests through the use of fine seasonal ingredients. Though they are fundamentally kyo-ryori specialists, each Yugyoan branch also specializes in its own type of Japanese cuisine. The Kyoto main restaurant is purely dedicated to kyo-ryori, while the Sendai and Tokyo branches specialize in teppanyaki. The Hotel New Grand Yokohama branch is unique in offering sushi alongside kappo, making the menu a beautiful fusion of both Tokyo’s and Kyoto’s traditional cuisines.
