Located outside the major cities of Tokyo and Yokohama, this location has the luxury of being particular about its offerings for local clientele and those in the know. Something of a local celebrity, Takehiro’s chef regularly makes appearances in the community and goes to great lengths to be a man of the people, in spite of his picky taste when it comes to ingredients and unwaveringly delicate knifework. His easygoing demeanor and attentive customer service makes already excellent sushi all the more delicious. Chef Take’s restaurant only begins to boil rice when its customers come in, using traditional Edomae techniques to form oblong mounds of pearls lacquered with red vinegar. From sashimi to nigiri, this sushi-ya takes its time to decoratively slice fish into a feast for the eyes and palate.
