Experience Details

Immerse yourself in the flavors of Cholula with a culinary experience that begins at the local market, where you will know the biodiversity of the Cholultec milpa and select fresh ingredients to cook. In a close and practical environment, you will learn to prepare dishes inspired by pre-Hispanic and Poblano heritage, with options adapted to different food needs, such as vegan or gluten-free cuisine. The activity combines cuisine, culture and local cuisine, offering an educational and sensory experience.


This is a culinary activity taught by an instructor, not a traditional guided tour. The experience is led by Alfonso Rocha (MilpaChef), chef specializing in sustainable gastronomy. During the class, the host acts as an instructor and culinary guide, sharing practical and cultural knowledge. Alfonso was director of Slow Food Mexico for 10 years and is currently professor of gastronomy at the University of the Americas Puebla (UDLAP).

What You’ll Experience

During this activity, travelers will start with a guided visit to the local market in downtown Cholula, where they will know ingredients of Cholultec milpa and regional biodiversity that we will use to cook. Afterwards, we will return to the kitchen to prepare pre-Hispanic, poblano and international food using the fresh products we have just bought. Throughout the experience you will learn traditional techniques, culinary history and the cultural origin of each dish, while cooking and tasting together in a relaxed and authentic atmosphere.
