Carefully selected vegetables purchased directly from contract farmers throughout Japan, fresh fish purchased daily from Tsukiji, and tempura made with the chef’s proprietary special oil to bring out the best flavors of the ingredients. Tempura Ono offers excellent English-language service to accommodate guests from around the world. In 2006, Koichiro Shimura took over as the second-generation chef at Tempura Ono and began frying tempura from the "heart", mainly for VIP guests from overseas. The chef considers guests' preferences to personalize the omakase menu and can also recommend sake pairings. The menu can be changed to accommodate vegetarian and vegan dietary needs at the time of reservation. Thoughtful service and artisanal ingredients make this a once-in-a-lifetime opportunity.
